Angela’s Farinata Recipe

Cook 4 cups of beans with 4 whole sausages.

Once cooked, divide beans in half. Mash 1/2 of the beans, leave the remaining beans whole.

In another pan add olive oil and the following to sauté with salt and pepper:

  • curly/wrinkly black cabbage leaves and kale chopped
  • 5 or 6 celery sticks diced
  • 2 carrots chopped
  • 4 or 5 potatoes diced
  • Some parsley chopped
  • 1 leak chopped

Once above are sautéed add 5 cups of chicken broth, then add the mashed beans with whole beans and sausages into the sautéed vegetables.

Add 2 to 3 cups of water and polenta flour and let everything slow simmer for 30 to 40 minutes.
